Chef Ivan Ralston is one of the most awarded Brazilian chefs.
He worked in the Maní Restaurant for two years and moved to Spain, where he worked at El Celler of Can Rocca and Mugaritz. In 2014, he opened his own restaurant, called TUJU. Every two weeks, the menu of the restaurant changes to reflect new discoveries. According to him, the menu is based on product, technique and culture. "The quality, technique and story must be evident in each dish."
